Lemon Poppy Seed Muffins

These Lemon Poppy Seed Muffins are the perfect muffin for spring. Bursting with citrus and seeds and a heavenly glaze.




Muffin Ingredients:

  • 1 cup sugar
  • zest of two lemons
  • 3 cups flour
  • 1 tbsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1  1/2 cups milk
  • 2 eggs, at room temperature
  • 1 stick unsalted butter, melted
  • 1 tsp lemon juice
  • 1/3 cup poppy seeds

Glaze Ingredients: (Mix together and drizzle on top of cooled muffins)

  • 1 cup confectioners sugar
  • juice of at least one lemon
  • zest of one lemon



  • Pre-heat the oven to 375°
  • Line muffin tin with paper liners
  • Combine sugar and lemon zest, working together with your hands till well combined
  • Mix in the flour, baking powder, baking soda and salt into the sugar, set aside
  • In another bowl whisk together milk and eggs
  • Fold in liquid mix into the dry mix
  • Fold in butter
  • Fold in lemon juice and poppy seeds
  • Fill cupcake pans and bake till golden brown (around 22 minutes)
  • Let muffins cool completely before drizzling glaze on top
  • Enjoy!
