Vanilla Granola with Cocoa Almonds

I found this simple Vanilla Granola recipe here which I took and slightly made it my own. Here is what I did:

Oats, Honey, Coconut Oil, Brown Sugar, Vanilla Extract and Cocoa Roast Almonds.

I crushed the almonds to be able to spread them more through the mix since I only had two packages left.

2 1/2 cups of rolled oats, two packets of 100 calorie cocoa roast almonds, 1/4 cup coconut oil (melted), 1/4 cup brown sugar, 4 tbsp honey, 2 tsp vanilla extract. Mix together and spread on a lined cooked sheet. Bake at 300 for 30-45 minutes, mixing occasionally.

Overall it was very easy to make, it had a nice vanilla and honey taste.  I prefer a much sweeter granola because of my sweet tooth, so I will try to incorporate maple syrup and dried cranberries the next time I make this recipe.
