Happy Halloween – 2013

The start to our Jack-O-Lantern.
Little Miss helped scrape out all the pulp and seeds. (Save the seeds!)
Our finished Jack-O-Lantern.
Remove as much of the pulp from the seeds as you can. Place the seeds in a colander, then put the colander in another bowl and rinse with water a few times. Rinsing the seeds helps the salt that we add later stick. It also helps the seeds pop like a popcorn bag.
Spread them out on a baking sheet still wet. Sprinkle with coarse sea salt and bake at 350 for 20-30 minutes or till light golden brown. I stir them a few times to make sure that both sides become toasted.
Salty, crunchy and pop-able. Watch out – they are addicting!
