I put together an easy arugula salad for lunch at work.
Baby arugula greens with grilled chicken. Ina frying pan, I cook the chicken with a little salt and pepper till its a golden brown.
I rolled some goat cheese in salted sunflower seeds.
I topped it off with a home made lemon juice and olive oil salad dressing. It was quick, easy, and resembled a fancy salad from a restaurant.
